Angus pointed out a link on the Carrots ‘n’ Cake website for some paleo-friendly no bake chocolate fudge cookies. She totally had me at no baking. Also chocolate. Also fudge. Also cookies. In fact, that whole recipe sounded like it was pretty much made of win! As luck would have it, I already had all the ingredients. Well, it would’ve been churlish not to try, right?
I followed the recipe, leaving out only the honey, which seemed excessive given the dates. I was right: the resulting mixture was very sweet! In a “mmm” not a “nngh” way, I hasten to add!

Well, basically exactly what I’d put in the fridge three hours earlier. Delicious, gooey blobs of delicious goo. Er… oh. Right. That said, I reckon they’d be pretty nice frozen, but in their current state they really weren’t going to work as cookies!
Naturally we ate half the mixture anyway, just to give it a fair taste test! What? It tastes like really indulgent chocolate icing and was glorious straight off the spoon. Don’t judge me…
Speaking of which, time out to restate that for the record: it tastes like really indulgent chocolate icing. So worth noting the recipe for that future purpose, if nothing else!
Meanwhile, I decided to see what would happen if I tried making the rest into some kind of chocolate mousse. The answer is you have the most ridiculously rich and delicious chocolate mousse. Shown here in one bowl having used half the listed ingredients. I’d say the full mix is good for about six servings in total.
- 12 pitted medjool dates
- 3 tbsp water
- 2 tbsp melted coconut oil
- 2 tbsp cocoa powder
- ½ tsp vanilla extract
- ½ tsp sea salt
- 400ml coconut milk
Puree the dates, water, and coconut oil until totally smooth, then mix in the rest. I didn’t fully mix the milk, which left pretty swirly bits. Chill, and serve. Absolute chocolate-fix heaven!
